I can't use a milk based marinade for meat or chicken. What can I use instead in the Fried Chicken Sandwich recipe?

Our answer

Nigella's Fried Chicken Sandwich (from COOK, EAT, REPEAT) marinates a skinless, boneless chicken thigh in a spicy mixture of buttermilk, or yogurt, plus paprika, garlic and mustard. The marinade tenderizes and seasons the chicken.

We suspect that you could use a plant-based yogurt instead of the buttermilk and we would suggest using an unsweetened, plain plant-based yogurt such as soy milk or almond milk yogurt. We would avoid using a coconut milk yogurt as this can be very rich and thick. Plant-based yogurts can be slightly sweeter than cow's milk yogurt so you may like to add an extra ½ teaspoon of lemon juice to the marinade to offset this. But please note that as we have not tried the marinade with plant-based yogurts ourselves, we are unable to guarantee the results.
