Frozen Shredded Coconut

Asked by Sallymanella. Answered on 13th July 2016

Full question

I want to make Nigella's Coconut Macaroons and have managed to find shredded coconut in Morrisons; the coconut is frozen and I wondered how best to use it in the recipe as I have never used it before. Should I remove some of the moisture after thawing it out or just use when thawed? Thank you.

Our answer

Nigella's Coconut Macaroons (from HOW TO BE A DOMESTIC GODDESS) are made with shredded coconut. This is a sweetened shredded coconut that comes in bags. It is dried coconut but moister than desiccated coconut and is sweetened. It can be a little difficult to find in the UK but is more popular in the US. You can buy the Baker's Angel Flake shredded coconut on-line in the UK.

The frozen shredded coconut is made with fresh coconut flesh and is unsweetened. It is often used in savoury cooking. If you have some in the freezer then you could try using it in soups and curries, such as Spinach And Coconut Soup and stirred into cooked coconut rice before serving with Nigella's Tomato Curry . The coconut will need to be thawed slightly before it is used.
