Girdlebuster Pie Ingredients

Hello, I would like to bake Girdlebuster Pie but, living in Italy, I cannot find some typical ingredients: double cream and golden syrup. I would like to ask how should I replace them. For instance, to use mascarpone cheese instead of double cream and honey instead of golden syrup? These changes will affect the taste of the pie? Thanks for the help and goodbye!

Nigella's Girdlebuster Pie (from Christmas and on the Nigella website) is a freezer pie with a crumb crust, a coffee ice cream filling and a butterscotch (caramel) topping. The golden syrup and double cream are used for the topping.

For the double cream you can use a whipping cream instead, or a good pouring cream if whipping cream is not available (but preferably one with a fat content of 30% or more). As you do not need to whip the cream it is not so necessary to have pasteurized cream and you could use a UHT cream instead. The golden syrup is more difficult to replace and you need an invert sugar to help to keep the topping soft, even when frozen. Agave syrup, light corn syrup or honey are the closest alternatives. The first two are preferable as they are flavourless sweeteners. Honey can have a fairly strong flavour and you may find that this comes through in the topping. So if you have to use honey then try to use a light golden coloured clear (liquid or runny) honey as this is likely to be milder that some of the darker and set (creamy) types.
