Herbs For Jumbo Chilli Sauce

Asked by cubbles. Answered on 6th August 2016

Full question

Can I use a different herb instead of coriander for the Jumbo Chilli Sauce?

Our answer

Nigella's Jumbo Chilli Sauce (from KITCHEN) is a spicy sauce made from roasted red peppers, chillies and fresh coriander (cilantro). The coriander adds a slightly citrusy note and is a good partner for the chillies. However some people are sensitive to coriander and find it has a soapy flavour.

You could omit the coriander completely from the sauce and add an extra squeeze or two of lime juice instead. Otherwise you could use another soft herb. The slightly anise flavour of basil, particulary Thai or Asian basil, would go well with the ingredients, or a combination of a little fresh oregano and flat-leaf parsley. However as the strength and flavour of different herbs can affect the sauce, we would suggest that you blend the sauce without the herbs first and then add your chosen herbs a little at a time, tasting in between each addition, until you are happy with the taste of the sauce.
