How are the mushrooms cooked in the Crunchy Salad With Hot And Sour Dressing?
Nigella's Crunchy Salad With Hot And Sour Dressing (from Nigella Express) is a combination of fresh vegetables and a Thai-inspired spicy dressing. The mushrooms are not cooked but are used raw and thinly sliced. The mushrooms will soften slightly in the dressing but should not become soggy.
You could omit the mushrooms and use extra of the other vegetables, but if you prefer to cook the mushrooms first then we suggest sauteing them in a little vegetable oil until they have become tinged with brown at the edges. Transfer to a plate lined with kitchen paper (paper towels) and leave until cool (about 30 minutes), then add to the other salad ingredients and toss with the dressing.
