Introduction

This is a delicious and different salad that is easy to prepare and is always a talking point at get-togethers.

Ingredients

Serves: 0

For the Salad

  • 2 packets rice noodles (instant noodles, broken up)
  • 1 cup sunflower seeds
  • 1 cup sliced almonds
  • ½ shredded red cabbage (medium sized)
  • 1 cup chopped scallions

For the Dressing

  • ½ cup oil
  • ¼ cup vinegar
  • ¼ cup sugar
  • 2 tablespoons soy sauce
  • 1 chicken broth cube (or vegetable, dissolved in a tablespoon of boiled water)

  • GRILL NOODLES, SUNFLOWER SEEDS AND ALMONDS UNTIL BROWN AND SET ASIDE UNTIL JUST BEFORE SERVING. (CAN BE DONE A FEW HOURS BEFORE)
  • MIX THE SHREDDED CABBAGE AND scallions TOGETHER AND SET ASIDE.
  • MAKE THE DRESSING AND SET ASIDE.
  • MIX EVERYTHING TOGETHER AT THE LAST MINUTE, JUST BEFORE SERVING TO KEEP THE SALAD FRESH AND CRUNCHY.
