Hello, I would like to check how long can Love Buns be made in advance? Do they keep well?
Nigella's Love Buns (from Feast and on the Nigella website) have a cake base that is very similar to a Victoria sponge. This type of cake keeps quite well and uniced the cakes can be stord for up to 5 days in an airtight container in a cool place, or frozen in a resealable container for up to 3 months.
However the icing is slightly less durable. It is a meringue based icing, sometimes known as seven minute frosting. The egg whites, syrup and sugar are whisked over a saucepan of hot water and this means that the icing can be kept a room temperature, but is at its best within 24 hours. After this the icing can start to become very soft. If you are not going to eat the buns quickly then it may be best to follow Nigella's suggestion of making half of the icing and topping 6 buns and then freeze the remaining buns for another day.
