I'm not clear how many finished/double cookies the Linzer Cookie recipe makes? The description suggests 12 from initial roll so difficult to see how you get to 28?

Nigella's recipe for Linzer Cookies (from COOK, EAT, REPEAT) has a dough that includes ground hazelnuts, which makes the dough slightly more forgiving if you are re-rolling offcuts of dough. The recipe states that you can make up to 28 cookies "with ruthless re-rolling".
From the inital discs of dough you should get 12 sandwiched cookies. After that, you can re-roll the offcuts several times and cut out as many cookies as possible and the maximum we have made is 28 sandwiched cookies (so 28 tops and 28 bases), though you may get less than this depending on how thinly you roll out the dough and how much patience you have. If the offcut dough is a bit sticky then it may help to wrap and chill it for 30 minutes to 1 hour before trying to roll the dough out again, or roll it between two sheets of baking parchment (parchment paper). Try not to use extra flour when rolling out the dough as it will make the cookies dryer and tougher.
