For the Salmon and Sushi Rice - does the salmon go into a dry pan please? Sorry - I'm not terribly experienced.

Nigella's Salmon And Sushi Rice (from KITCHEN) is an easy week night supper where the seared salmon is served with sticky sushi rice and a slightly spicy stir-together sauce.
Salmon is a fatty fish and if the salmon fillets have the skin on then you can cook them without any oil if you start them skin side down in the pan, as some of the fat will render out as you cook. Nigella's recipe uses skinless salmon and if you have a well-seasoned griddle (grill pan) or cast-iron skillet or a good non-stick frying pan then you can cook the salmon without extra oil. Don't try to turn the salmon too soon, let the fish develop a golden crust and then it should release easily from the pan. If you are worried about the salmon sticking, then you could brush the top side of the salmon with a little vegetable oil. Add the salmon to the hot pan top side down and cook following the instructions in the recipe. We would avoid adding lots of oil to the pan itself as the oil can spit and, as mentioned, as salmon is an oily fish you don't want it sitting in lots of oil to cook.
