Full question
For the Greengage Jam, is the weight of greengages before halving and stoning or after? I have assumed it is after so hope it turns out ok but just for future reference. Thanks.
Our answer
Nigella's Greengage Jam (from HOW TO BE A DOMESTIC GODDESS) is a delicious way to preserve this green-golden type of plum. Greengages (also known as Reine Claude) are popular in many European countries but not so common in the UK. They are usually very sweet with a honey floral flavour, though if they are picked early then they may be firmer and slightly less sweet, and at this stage are ideal for jam.
The ingredients list states "1.5kg greengages, halved and stoned". If the preparation is stated at the end then the weight of the ingredient is before preparation. So in this case, it means 1.5g of fruit before halving and removing the stones (pits). However, if you used 1.5kg of halved and stoned/pitted greengages then it should not matter too much as the stones don't make up a large proportion of the weight of the fruit.
