Large Cherry Cheesecake

Full question

I would like to make the Cherry Cheesecake but for about 14 people, however the recipe indicates it serves 6-8. How should I go about increasing the portions? Should i simply double everything? Thank you!

Our answer

Nigella's Cherry Cheesecake (from Nigella Express and on the Nigella website) is a no-bake type of cheesecake so it is easier to scale up as you don't have to worry about the cooking time. However if you double the quantities you will probably find that you have too much mixture for a 20cm/8-inch springform tin.

A 40cm/16-inch springform tin will be difficult to find and is unlikely to fit comfortably in a domestic fridge. Also the slices of cheesecake would be fairly long and could break up as you lift them on to a plate. The easiest way to solve your portion problem would be to make a double quantity of the cheesecake and divide equally between two 20cm/8-inch tins (hopefully you can borrow a second tin if you only have one). The most we would scale up this recipe is by making 1 1/2 times the recipe and setting the cheesecake in a 25cm/10-inch springform tin. But as this may only servaround 10 people it still won't quite be enough.
