Nigella uses melted butter in her Chocolate Chip Cookies recipe. Does this mean microwaving the butter or softening it at room temperature?

Our answer

Nigella's Chocolate Chip Cookies (from KITCHEN) are made with melted butter that is then mixed with white and brown sugars. The butter is melted until it is liquid and then left to cool slightly, it is not softened or room temperature butter.

You can melt the butter in a saucepan on the stove, or in a microwave. If using a microwave use low power and have a suitable cover over the container (with steam vents) as butter can tend to spit when melted quickly in a microwave. You should let the melted butter cool a little before you use it as if it is too hot then it could cook the eggs slightly when they are added, which would leave some lumps in the cookie dough.
