Mixing Banana Bread

Full question

I've made Nigella's Banana Bread a few times but when I add the mashed bananas the sugar/butter/egg mixture looks curdled. Is it supposed to look like that?

Nigella's Banana Bread (from HOW TO BE A DOMESTIC GODDESS) is a banana loaf studded with rum soaked raisins and walnut pieces. This banana bread uses melted butter rather than oil for a richer flavour.

It is normal for the mixture to look slightly curdled when the mashed bananas are added as generally fat and liquids do not mix together easily. However when the flour is added the batter should become smoother. Also make sure that all of the ingredients are at room temperature as cold and warm ingredients don't mix together as well.
