I don't like English mustard, can I use French wholegrain mustard instead for the Sweet Potato Macaroni Cheese?
Nigella's Sweet Potato Macaroni Cheese (from SIMPLY NIGELLA) has pasta and a cheese sauce that is bolstered with earthy cooked sweet potatoes. Mustard is added to the sauce to give it a little extra piquancy and to cut through some of the richness.
Nigella likes the heat of English mustard but if it is not to your taste then you can use a different mustard. Dijon mustard would be a good alternative if you want something slightly milder. If you like wholegrain mustard then you could use this as an alternative, though it will be slightly grainy in the sauce. If you use wholegrain mustard you may also need to add a little extra to the sauce. We suggest adding one teaspoon to the sauce at step 3 and then tasting it, adding an extra half to one teaspoon if you feel that the sauce needs it and bearing in mind that the flavour of the mustard will be muted by the cheeses, pasta and sweet potato.
