Oats For Cookies

Full question

Can I use normal oats for the ANZAC cookies? As this is all I have. Many thanks.

Our answer

Nigella's Seed-Studded ANZAC Biscuits (from SIMPLY NIGELLA uses rolled oats. Nigella suggests using sprouted oats; these are made from oat grains that have germinated but are then rolled before they become fully grown plants. However normal rolled oats are also fine for the biscuits.

We would mention though that you need to use rolled oats (quick-cooking oats) but not instant oats. Whole (jumbo) oats should be avoided as these oats don't bind as well and the biscuits will be more crumbly. And we don't recommend using pinhead oats (steel cut oats) as these have a very hard texture and would not be suitable for the biscuits.
