Pan for Red Velvet Cupcakes to Cake

Full question

If I'm using the Red Velvet Cupcake recipe to make one large cake, do I need to use a springform pan?

Our answer

Nigella's Red Velvet Cupcake recipe (from Kitchen and on the Nigella website) is enough also to make a sandwich/layer cake using 2 x 25cm/10-inch cake pans. These pans are not the springform type of pans.

We imagine that it may be possible to use one deeper cake using a deep loose bottomed or springform pan of around 25cm/10 inches diamete. However we have not tried this ourselves so regret that we cannot give any guidance on the baking time or likely results. Generally larger cakes can be a litte tricky to bake in domestic ovens so watch the cake carefully and start checking after 30 minutes unless you can see clearly through the oven window that the cake is still quite raw in the centre, as if you open the oven door before the cake has started to set then it will sink easily. If the top of the cake is browning too quickly then cover it with a piece of foil.
