Pectin For Chilli Jam

As I was unable to source jam sugar during Lockdown, I used the amount of pectin advised in the Chilli Jam recipe but ended up with jam that you had to slice. After experimenting, I suggest 20g of pectin powder to 1kg of sugar for a good set but still 'spoonable'.

Our answer

Nigella's Chilli Jam is made with jam sugar, that has added pectin, as the chillies themselves don't contain pectin and the jam will not set without pectin. Jam sugar is usually readily available in the UK and mainland Europe, but in the US, where it is known as gelling sugar, it is much more difficult to find.

The addition of pectin was tested for the US market, with US ingredients, and the amount suggested in the introduction was correct for the product used (a 1.75 ounce box). Unfortunately products do vary between markets and the powdered pectin in the UK may have a different strength and require a different amount. There is a similar problem with strengths of leaf gelatine between the UK and the US, though we do always try to highlight where there may be differences.
