Nigella's Red Prawn And Mango Curry (from NIGELLA EXPRESS) is a Thai-inspired dish encompassing ingredients to give a hot, sweet, sour and umami-filled curry. For speed and ease the curry uses frozen king (extra-large) prawns (shrimp).
The prawns are used from frozen and as most prawns come coated with a thin glaze of ice (to protect them while frozen) they are rinsed first to remove any excess. This will start the thawing process but the prawns will cook quickly once they are in the curry sauce. Just check that they are cooked through before serving the curry. You can also use already thawed prawns - they will likely be cooked through by the time the mixture comes to the boil, but again check before serving. Our preference would be to use raw/uncooked prawns for this dish, but if cooked prawns are the only option then cook until the prawns are just heated through.
