Full question
In the Gemelli with Anchovies, Tomatoes and Mascarpone, could I use ricotta instead of mascarpone? I make my own ricotta and I am always looking for good recipes to use it. Thank you!
Our answer
Nigella's Gemelli With Anchovies, Tomatoes And Mascarpone (from her new book AT MY TABLE) has a quick sauce made from cherry tomatoes, dry white vermouth and mascarpone. Adding mascarpone gives the sauce a creamy, rich quality, even though only 2 tablespoons of mascarpone are used.
Mascarpone is a high fat cream cheese with a smooth texture whereas ricotta is a lower fat cheese with a slightly grainy texture. If you are using homemade ricotta made with full fat (whole) milk and cream then it could be used as an alternative though the sauce will have a slight graniness from the ricotta, which not everyone may like, and won't be quite as creamy as the version made with mascarpone.
