Sheet Cake As A Layer Cake

Full question

Could I use the Chocolate Sheet Cake as a layer cake or will it be too dry? I was thinking of making two and sandwiching with ganache or would that be too heavy?

Our answer

Nigella's Chocolate Sheet Cake is an easy to make chocolate sponge cake that is topped with a fudgy frosting. The warm chocolate frosting is poured over the just baked sponge cake and the two meld together, making the cake rich and moist. Unfortunately if you made the sponge into two layers as a cake we don't think that it would work that well on its own as you would not get the same effect without the frosting.

However Nigella has several fabulous chocolate layer cake recipes that you may like to try instead. The Dark And Sumptuous Chocolate Cake is a melt and stir sponge that is also easy to make and it is sandwiched with a variation on ganache. It is also vegan and popular with both vegans and non-vegans alike and you could always substitute your favourite ganache for the one in the recipe. The Devil's Food Cake and Chocolate Fudge Cake are both made with the creaming method but are also hugely popular chocolate cakes. These cakes are all two layer 20cm (8-inch) round cakes. If you were to make one quantity of the sponge batter and bake in a 33x23cm pan you will find that the layers are thinner than for a regular layer cake, but would be closer to the depth of the sheet cake.
