Should I Use Almond Meal Or Almond Flour For The Almond And Orange Blossom Cake?

Asked by ABK123. Answered on 28th April 2026

Full question

I am about to try baking the Almond and Orange Blossom Cake. Can I buy almond flour in the United States or do I need to grind almonds with skin on to get the right taste for the recipe? Thank you.

Our answer

Nigella's Almond And Orange Blossom Cake (from HOW TO EAT) is a damp and fragrant cake that is flavoured with orange and orange-flower water. The cake can be made gluten free by using rice flour instead of plain flour.

The cake uses UK ground almonds in the recipe and it is made by finely grinding blanched (skinned) almonds, though you can buy already ground almonds in most UK supermarkets. In the US the equivalent is called almond flour, though it can be quite expensive and you may need to look for it in cake decorating stores, larger supermarkets or online. The US also has almond meal, which is made from finely ground raw (skin-on) almonds. Almond meal can often be easier to find in US supermarkets and may not be quite as expensive as almond flour. In our experience both almond flour and almond meal work equally well in cakes such as this one, so we think that you should be able use either option, without changing any of the measurements. We would suggest that you use the option that is most convenient for you.
