Nigella's Warm Shredded Lamb salad With Mint And Pomegranate (from NIGELLA BITES) has a shoulder of lamb that is slowly roasted until it is tender enough to shred with forks. The meat is then scattered with shredded mint and juicy pomegranate seeds. The recipe asks for a shoulder of lamb that is approximately 2.5kg (5 1/2 pounds).

In the UK a whole shoulder of lamb is usually sold on the bone and if possible we would suggest buying a lamb shoulder on the bone for this recipe. Meat cooked on the bone usually has a slightly better flavour. Shoulder of lamb has a fair amount of fat and so will stay moist during the long, slow cooking. If you can only find a shoulder of lamb that is off the bone, and weighs slightly less, then the cooking technique will still be the same and you may like to aim for a slightly shorter cooking time of about 12 hours. The cooked lamb will also happily stand, tented with foil and in a warm place, for up to 1 hour.
