I was wondering if it would be possible to make a single layer of the Coffee And Walnut Layer Cake by halving the ingredients?
Nigella's Coffee And Walnut Layer Cake (from KITCHEN) is a moist sponge made with ground walnuts and espresso powder. The sponge is filled and iced with a coffee-flavoured buttercream. It is possible to halve the quantities and make just a single 20cm (8-inch) layer and the ingredients quantities are easy to halve (use 110g each of sugar and butter and halve everything else). The baking time for just one layer will be the same as stated in the recipe.
However a single layer of the cake will look slightly skinny. if you only have one cake pan then we suggest making a second layer separately to make a full layer cake. If you are icing the cake as a single layer only then you may want to make slightly over half of the buttercream to spread over the top, so that the cake looks a little more generous.
