I use Mary Berry's tip: cube the ice cold butter and leave to stand for 10 minutes in a bowl of lukewarm water. It will soften beautifully.

Chef Michael Smith from Canada grates frozen butter into flour instead of cutting it in. This works very well for pastry and would work well with cold butter that needs to soften quickly.
