Storing Honey Cake

Nigella's Honey Cake looks good. Does it keep well?

Nigella's Honey Cake (from Feast and on the Nigella website) is not actually made with honey but with golden syrup as it has a less assertive flavour than honey. However the cake does keep well as golden syrup (like honey) is hygroscopic, which means that it attracts water. So the honey cake does not dry out so much while it is stored.

The cake should be stored in an airtight container and should be fine for up to 1 week. However it must be kept in a cool place as if you keep moist cakes in a warm environment then it can encourage mould to develop. The cake also freezes well. Wrap the fully cooled cake tightly in a double layer of clingfilm (plastic wrap) and a layer of foil and freezer for up to 3 months. To thaw the cake, unwrap it and stand it on a wire rack at room temperature for 5-6 hours.
