Smoked Salmon With a Sherry Vinaigrette

Ingredients

Serves: 6

For the Sherry Vinaigrette

  • 2 tablespoons sherry wine vinegar
  • salt (to taste)
  • pepper (to taste)
  • 6 tablespoons extra virgin olive oil

For the Celery Root Salad

  • 12 ounces celery roots
  • 1 lemon (quartered)
  • 6 ounces capers (drained and coarsely chopped)
  • 1 pound thinly sliced smoked salmon
  • fresh chives (for garnish)

To make Sherry Vinaigrette

  • In screw-top jar, combine sherry vinegar,salt & pepper to taste and olive oil. Cover and shake well. Set aside.
  • To make Celery Root salad

  • Peel celery roots, rub roots with lemon.
  • In large saucepan, combine celery roots and enough water to cover. Bring to boiling and reduce heat. Cover and simmer 30 to 40 minutes until just tender. Drain and cool.Then cut in matchstick-size julienne.
  • In medium bowl, combine celery root and capers. Shake vinaigrette and pour over celery root mixture. Toss to coat.
  • To serve

  • Spoon a mound of the salad in centre of each of 6 serving plates.
  • Cover with smoked salmon slices. Surround salmon with more salad.
  • Cover and refrigerate 2 hours until chilled.
