Full question

Hi, I have made Nigella's No-Churn Salted Caramel Bourbon Ice Cream without any alcohol (child proof). But how long can I keep it in the freezer for? Cheers!

Our answer

Nigella's No-Churn Salted Caramel Bourbon Ice Cream (from AT MY TABLE) can be made without alcohol. The alcohol adds a little flavour and helps to give the ice cream a slightly softer texture, but it does not affect the keeping qualities of the ice cream. However this type of ice cream, made without an egg custard base, tends to not keep quite as well as custard-based ice cream as the texture changes over time.

The ice cream should be stored in a tightly sealed container in the freezer. It is at its best within 1 week of making and can be kept for up to one month.
