Tiered Clementine Cake

Full question

I love making the Clementine Cake. I would like to make it as a double tiered (two different sizes) as an anniversary cake and cover it with fondant icing. Is the cake strong enough to support this?

Our answer

Nigella's Clementine Cake (from HOW TO EAT) is a very moist gluten-free cake. As it is gluten-free the cake is more tender and it could be difficult for the lower tier to support the weight of an extra cake on top. If you were to try this then we would recommend inserting dowels into the bottom tier for extra support and putting the upper tier on a thin cake board so that it also has some extra support on the base. Don't try to split the cakes to add a filling, as they will crumble too much.

However as the cake is very moist there is a risk that the fondant icing could become too soft or dissolve with the liquid from the cake, particularly if the weather is warm. Putting a thin coat of buttercream on the cakes before adding the fondant could help and make sure the cake is kept in a cool place but not in the fridge. We would also mention that as we have not tried the cake in this form we are unable to guarantee the results.
