Using Beef For Kofta

What is the ratio of ground lamb and ground beef for making Nigella's kofta? We found that the flavour of the lamb was a little too strong.

Our answer

Nigella's Lamb Kofta with Garlic Sauce (from AT MY TABLE) are warmly spiced with cumin, coriander and allspice and served with an intense garlic and yogurt sauce. Nigella uses lamb for her kofta but beef can also be used and a mixture of the two meats is also fine. Most people find it easiest to use half minced (ground) lamb and half minced beef, but you can vary the proportions according to your own taste and even use all beef.

However, we would suggest not using very lean beef as it can become a little dry when cooked, particularly if the kofta are grilled over a barbecue. We would suggest looking for minced beef with a fat content of around 10-15%, which should give a good balance of moisture and flavour.
