Using Moonblush Tomatoes

Nigella's Moonblush Tomatoes (from NIGELLA EXPRESS) are cherry tomatoes that are left in a warm oven overnight, so that they soften and the flavours concentrate. It is a great way to pep up the flavour of store-bought tomatoes out of season. Nigella suggests mixing the tomatoes with a drained can of tuna and tossing this with cooked pasta to make an almost instant sauce. Save a cupful of the pasta cooking water before you drain the pasta and add a splash or two to the pasta, tuna and tomatoes if it needs a little extra liquid.

The tomatoes could also be added to a couple of easy pasta dishes, such as Nigella's Slut's Spaghetti or Pasta With Anchovy Sauce. You can toss the Moonblush Tomatoes into the pasta at the last minute or scatter them over the top just before you serve the pasta. The tomatoes are also good addition to Nigella's Salad Nicoise, instead of the sunblush tomatoes.
