Nigella's Fish Finger Bhorta (from COOK, EAT, REPEAT) is Nigella's version of the spicy dish of herbs, fish and mustard oil. The crisp coating on the fish fingers adds an extra texture against the soft fish and onions.

Usually if you double a recipe you would double all of the ingredients. We would suggest starting with 5 tablespoons of oil and then adding an extra tablespoon if needed, though we suspect that you may need all of the oil as there will be quite a lot of onions. There should be enough oil to coat all of the onion slices, so that as they cook they soften and turn soft, sweet and golden. If there is not enough oil, the onions can catch and blacken in the pan, which will make them taste bitter.
