What Can I Use Instead Of Ginger Wine In The Ginger And Passionfruit Trifle?

Asked by Clairette. Answered on 13th July 2022

Full question

In the Ginger and Passionfruit Trifle, can I replace the ginger wine for ginger syrup instead? Because I'd like to make this for my grandchildren. Thanks.

Our answer

Nigella's Ginger And Passionfruit Trifle (from NIGELLA EXPRESS) is not quite a traditional trifle in a bowl but a free-form "plate trifle" that is assembled and served at the last minute. It consists of sponge cake, fruit and whipped cream and doesn't include any custard.

Ginger wine helps to give the trifle a ginger flavour, but if you want to make this for children then you could use a ginger syrup (or for the UK ginger cordial). As these are sweeter and more viscous than ginger wine, you may like to dilute the syrup slightly with water. Another alternative would be to use a good quality ginger beer, which is usually spicier and less sweet than ginger ale and should be non alcoholic. You could also use a ginger-flavoured cake, either store-bought or home made, if you wanted to boost the ginger flavour without ginger wine.
