Nigella's Chicken With 40 Cloves Of Garlic (from KITCHEN) braises chicken thighs with garlic, thyme and white wine or vermouth. There are 40 whole cloves of galic from 3-4 bulbs (heads) of garlic, but the cloves are left whole and with just the papery skins removed.
The whole cloves of garlic cook very slowly and lose their pungency, instead they become sweet and soft - or "savoury bonbons", as Nigella describes them. When you serve the chicken, you can either put several cloves of garlic on each plate, or put all of the cloves in a bowl and let people serve themselves. The best way to eat the garlic is to mash the soft cloves on the side of your plate (discarding any skin) and then spread a little of the sweet, sticky paste onto each morsel of chicken before eating it.
