Full question
Martini Rosata doesn’t seem to be easily available in the U.K. anymore and we’re just about to run out as we regularly make Prawn Pasta Rosa. What’s the best alternative? Just Martini Rosso? Thank you!
Our answer
Nigella's Prawn Pasta Rosa (from NIGELLISSIMA) has a creamy sauce made with mascarpone, prawns (shrimp), chilli flakes (red pepper flakes) and rosé vermouth (Nigella suggested Martini Rosato). The vermouth adds a hit of extra flavour as it is spiced with cloves, cinnamon and nutmeg.
It looks as if the Martini Rosato is available in the U.K. on line and there are also some other brands of rosé vermouth that are available. However, if this is difficult then the aromatics used for the Rosato would suggest that a red vermouth would be a better alternative than sweet white vermouth. If you are drinking a rosé wine with the Prawn Pasta Rosa then you could alternatively just add some of this this to the sauce instead of the vermouth.
