Full question
I baked half the mixture of the Butter Cut-Out Cookies. They went golden on the edges, but still seemed a little soft in the middle. What texture am I aiming for, please? My shapes weren't large. Thank you.
Our answer
Nigella’s Butter Cut-Out Cookies (from HOW TO BE A DOMESTIC GODDESS) has a butter cookie dough that can be rolled out and cut into shapes. The baked cookies can then be decorated with glacé icing.
The cookies should be crisp at the edges and firm but not hard when they are baked and should melt in the mouth fairly easily when you eat them. If they are slightly soft in the centre just after baking then they may well firm up as they cool, so let the cookies cool slightly on the baking sheet then transfer to a wire rack to cool completely. Also, if you roll the dough too thickly then the cookies may become golden brown on the edges but be too soft in the centre. So be sure to roll the dough to no more than 1/2cm (1/4 inch) thick.
