What Type Of Spelt Flour Is Used In The Apple And Cinnamon Muffins?

Asked by Anichka. Answered on 24th February 2026

Full question

The Apple and Cinnamon Muffin recipe is calling for spelt flour but I’ve noticed there are different ones. So I was wondering which spelt flour to use for these muffins- white spelt or wholemeal spelt? Or a combination of the two? Thank you!

Our answer

Nigella's Apple And Cinnamon Muffins (from KITCHEN) are an excellent way to use up apples that have been sitting around for too long and have become slightly wrinkled. They add moisture and sweetness to the muffins and combine well with the nuggets of chopped almonds.

The recipe suggests spelt flour and we would prefer to use wholemeal (whole grain) spelt flour. Nigella mentions that it has a rough-hewn nuttiness that works well for these muffins. However, if you can't find wholemeal spelt then regular plain (all-purpose) flour also works well, or you could use white spelt if you already have this in your cupboard or pantry.
