Full question
Where can I buy salted liquorice syrup for the Blackcurrant and Liquorice Ice Cream recipe please? We recently tasted some in Italy, we loved it. Thank you.
Our answer
Nigella's No-Churn Blackcurrant Ice Cream with Liquorice Ripple (from SIMPLY NIGELLA) has a base of blackcurrant puree, condensed milk and double cream that is whisked until thick. This mixture is rippled with salty liquorice syrup before it is frozen.
In the past we have used Lakrid's salty liquorice syrup, but at the time of writing only their regular liquorice syrup seems to be available. You may be able to use this and stir in a good pinch of salt before you add it to the ice cream. Most brands of salty liquorice syrup should also work. There is a brand called Lakritsfabriken that makes a salty liquorice syrup that seems to be available through liquorice-oriented vendors and some Swedish food websites. Salted liquorice is also known as salmiak liquorice, so it may help to look for syrups with this on the label. It is easiest to buy the syrup online in both the UK and the US.
