Ingredients

Metric Cups
  • rhubarb (some stalks, peel the big ones if needed)
  • sugar
  • water

Method

Raw Rhubarb Cordial is a community recipe submitted by AnLi and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • If you have a vegetable juicer (the kind that spins carrot juice etc), use that for the rhubarb. The big Magimix 5100 has that attachment, and there are also separate machines for it. Alternatively, use a food processor to mince the rhubarb into a really soft pulp (add a bit of sugar to help get it really juicy)
  • Extract the juices from the pulp by pushing through a sieve.
  • Mix juice with sugar to taste, then add water to taste.
  • Chill and enjoy!
