Mexican Beef and Bean Soup

An unusual, filling and warming soup


Serves: 4

  • 1 chopped onion
  • 2 sticks chopped celery
  • 1 chopped red bell pepper
  • 6 chopped tomatoes
  • 2 olive oil
  • 8 ounces ground beef
  • 1 can refried beans
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 clove crushed garlic
  • 1 pinch of cayenne pepper
  • 1 cinnamon
  • ⅘ pint beef broth
  • 1 pinch of salt
  • 1 pinch of pepper

  • Fry onion, pepper and celery in oil until softened.
  • Add beef and cook until browned. Add toms, refried beans, spices salt and pepper and stir well.
  • Stir in stock and bring to boil. Cover and simmer gently for 1/2 hr, stirring occasionally. Process.
  • The finished soup will be quite thick and not completely smooth.
  • Garnish with soured cream and chopped fresh coriander.
