I can't find crunchy amaretti biscuits in any supermarket this year - can you suggest a source or an alternative?

Nigella's Christmas Rocky Road (from NIGELLA CHRISTMAS) is a seasonal version of the Rocky Road Crunch Bars, using amaretti cookies, brazil nuts and glacé cherries. Most supermarkets sell the amaretti and you may also want to look for ratafia biscuits, which are similar to amaretti but smaller and usually slightly darker in colour. Otherwise, if you have a local Italian deli then they may have some, or the cookies are available on line.

If the amaretti are still difficult to find then you can certainly revert back to using rich tea biscuits. Biscotti may also be an alternative, though they could be a little too hard in texture. Gingerbread men are always popular at Christmas and if you like the flavour of ginger then you could try using these instead, but bear in mind that the overall flavour of the bars will be of ginger and spice.
