I'm in Australia and I would like to try making the Brown Butter Colcannon, but I'm not sure what potatoes to use. Hopefully you can help me?

NIgella's Brown Butter Colcannon (from COOK, EAT, REPEAT) takes the traditional mixture of mashed potatoes, cabbage, or kale, and spring onions (scallions) and elevates it with swirls of nutty, caramelly brown butter.
For the mashed potatoes you need to use a floury or starchy potato. You can use pretty much any potato that is this type, or labelled as being suitable for mashing. If you can find them then you could use King Edward or Russet Burbank. You could also use an all-purpose type of potato such as Sebago, but just make sure that you cook them until they are completely tender and you can inset a table knife easily into the potato.
