I've had a bundt tin lying around for ages in my cupboard and as the stars aligned i got a fresh delivery of a 2 pound pumpkin instead of persimmons! I knew this was a sign and i had to make this recipe. I must confess that when i read the ingredient list i was a little unsure but the smell from the oven proved me so wrong! My parents and i enjoyed this with fresh coffee and of course we had to pose the cake to take a few Christmas themed pictures before we went onto finish this! Followed the recipe to the T and i have never been this satisfied with the outcome!
