I loved Nigella's Clementine Cake but always had some cake batter left over, so it evolved into a sandwich sponge. The cream in the middle is a Chantilly cream with Cointreau added. The whole is topped off with a shred less marmalade glaze. It is a firm favourite with all my friends and art groups.
