Most often, when I’m leafing through each week’s entry for Cookbook Corner, I agonise long and hard before choosing the recipe I want to show you. But not so now: I simply could not look beyond the Mumbai-Style Chicken Burger; in fact, I returned to it again and again, greedily tasting it in anticipation. This is not to say that there aren’t many other recipes that could more than justify being selected here but this, for me, was The One. Yes, the list of ingredients is long, but if you decide to treat yourself to this book (or even if you just have a satisfactorily spice-stocked kitchen) you will be using them happily for many of the other recipes in it anyway.
