It was a great honour for me to able to contribute a recipe to the The Royal Marsden Cancer Cookbook: Nutritious Recipes for During and After Cancer Treatment, to Share with Friends and Family. This is in such a good cause, and doubly so: the Marsden is (literally) a life-saving institution, and a centre for excellence that deserves everyone's support; plus, as anyone who has gone through treatment for cancer, or has witnessed (as I have) loved ones going through it, knows, eating well is both difficult, often painful, but essential. I am not giving you the recipe I contributed here, but very much wanted to share the Matcha (Green Tea) & Peach and Melon, Coconut & Mint Ice Lollies, which will be a solace for those suffering, and a delight for those of us who are lucky just to eat for the pleasure of it.
