Waldorf Salad

Introduction

Story goes this salad is what American composer/lyricist Cole Porter supped on while living at the Waldorf/Astoria Hotel in New York in the 1930's. The original recipe did not have Stilton.

Ingredients

Serves: 4-6

  • 2 cubed red apples
  • 2 cubed green apples
  • 2 sticks chopped celery
  • ½ cup golden raisins
  • 1 cup currants
  • walnuts
  • 1 cup mayonnaise
  • ½ cup sour cream (light, or creme fraiche)
  • 1 teaspoon apple cider vinegar
  • 2 teaspoons sugar
  • 8 ounces crumbled stilton cheese

In large bowl combine all ingredients save the Stilton. Mix. Crumble Stilton over top and gently fold in not to break up crumbles. Chill.
