  • 1 green tea bag
  • 2 tablespoons caster sugar
  • 2 tablespoons chinese rice wine (mirin, or rice vinegar)
  • 1 lemon (zest of)
  • 2 mangos

  • Put the green tea bag in a small saucepan, add 100ml of boiling water and leave to infuse for 5 minutes.
  • Remove the tea bag, add the caster sugar, rice wine/vinegar, and lemon zest.
  • Heat gently to dissolve sugar then leave to cool.
  • Peel and slice mangoes, divide between 4 bowls, pour the green tea syrup over.
