Absolutely delicious buffet dish. The melon keeps the dish lovely and moist and tender. Serves 12. You will need a large mixing bowl for this!
- ½ kilogram cooked rice
- 1 chicken (boiled - or 4 breast portions cut into bite-sized morsels and cooled)
- 1 honeydew melon
- 2 slices ham (thick slices - diced into half inch pieces)
- 170 grams cooked and peeled shrimp
- ⅓ litre mayonnaise
- 3 teaspoons curry powder
- 1 lemon (juice of)
