Small meatballs to serve with garlic & yoghurt sauce for a starter or great with salad as a main meal

Ingredients

Serves: 4

Metric Cups
  • 1 kilogram chicken (minced)
  • 1 egg (can be left out, bind better with though)
  • 2 slices bread (preferably whole grain)
  • 2 tablespoons fresh ginger (minced or grated)
  • 2 cloves garlic (crushed)
  • 1 bunch fresh coriander
  • salt (to taste)
  • pepper (to taste)
  • 1 tablespoon mustard (mild, or small chopped red chilli)
  • 63 millilitres milk
  • 2⅕ pounds chicken (minced)
  • 1 egg (can be left out, bind better with though)
  • 2 slices bread (preferably whole grain)
  • 2 tablespoons fresh gingerroot (minced or grated)
  • 2 cloves garlic (crushed)
  • 1 bunch cilantro
  • salt (to taste)
  • pepper (to taste)
  • 1 tablespoon mustard (mild, or small chopped red chilli)
  • 2 fluid ounces milk

Method

Chicken & Coriander Meatballs is a community recipe submitted by amanda n and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • I do all this in my blender. For a rougher consistency, or for those not in a hurry like I always am!, chop and mix by hand.
  • Put roughly torn bread and enough milk to just cover in blender, soak for 1-2 minutes and then blend.
  • Add egg, ginger, garlic, salt, pepper, mustard or chilli and blend again. When you have a nice mush, add the chicken mince and coriander, and blend just enough so mixture is well combined.
  • Roll into small balls and fry - I do this in my non stick pan but you could do in a small amount of oil. This quantity makes about 30 balls. Serve with tsatsiki and/or sweet chilli sauce.
