Moroccan Inspired Chicken

I was given a jar of lemon preserve as a Christmas gift and was thus inspired to create this recipe.


Serves: 6 - 8

  • 1 large onion
  • 6 cloves garlic
  • 2 teaspoons paprika
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1 sprinkling of mixed herbs (a large sprinkling)
  • 175 millilitres red wine (1 glass)
  • tomato soup (1 sachet)
  • 8 large chicken breasts
  • water
  • preserved lemons
  • black pepper

  • In a large pot... Fry onions and garlic till soft. Add spices and herbs. I always add a bit extra Paprika because it gives the sauce an incredible richness of colour and flavour.
  • Sear chicken pieces till brown (I like to keep breasts whole). Add a glass of red wine to deglaze pot.
  • Empty sachet of tomato soup and add water, enough to cover the chicken. Add in diced lemon preserve. Remember to rinse off excess salt from the lemons.
  • Bring up to heat and simmer gently, with the lid on, for several hours or until the chicken falls off the bone.
  • Taste and season
  • Serve on a dollop of creamy mash potatoes and perhaps some flat leave parsley to finish
